Lentils and Rice


1 bag (2 cups) of lentils
5-6 cups water
1 large onion
½ cup olive oil
1 tsp cumin
1 tsp garlic salt
1 small can green chiles
pepper as desired


Wash and rinse lentils.   Place in a pan of water (add less water if you want it thicker) and boil 20 minutes.  Saute onions in oil.  Add onion with lentils and seasonings.   Cook a few minutes longer.  Blend in blender for a smooth consistency.  Eat over brown or other whole grain rice.   This also tastes good with corn (if you don’t have allergies to it).  You may also want to carmelize some purple onions to top this recipe.   Top with sour cream or plain yogurt if desired.

**Great as a dip on corn chips or on tortillas (instead of refried beans.)
